Squash Bolognese

Sometimes you can’t resist bringing home a variety of festive squash from the grocery store. The shapes and colours epitomize the season, but you may need something besides squash soup to make with your fall bounty. 

 

This recipe can be made with almost any squash (excluding spaghetti squash due to its atypical texture). The flavour and moisture content varies between varietals, but if you taste as you go, and adjust any liquids, sauces, or dressings used, you’ll be fine. Also, check if the squash you purchased has an edible peel or not. An acorn squash looks like a hassle until you realize you don’t need to peel it.
