Off the Menu: SOT Pan-Roasted Eggplant

We love hearing from you when you’ve had a spectacular dish in a restaurant, and the memory stays with you, such that want to try and recreate it yourself at home for your family and friends. 

 

It’s happening more frequently too, which speaks volumes for the standards and quality of our restaurants – it’s good news for everyone! 

 

We received an email from Helen S, who had recently attended a dinner at SOT Korean Restaurant, in Calgary’s Inglewood neighbourhood. 

 

“We really enjoyed our dinner last night at SOT. Everything was delicious! We particularly loved the wonderful Asian Pan Roasted Eggplant dish.   

 

Would Chef Alex be willing to share his recipe with us?” she asked. 

 

How could we resist? We’ve had that dish ourselves at SOT, and absolutely loved it! Many thanks to Chef/owner Alex Sang-ho Kwon for generously sharing this beautifully balanced and really delicious recipe.

I love how the roasted eggplant’s smoky flavor shines through in your recipe! It reminds me of the strategy in Drift Boss—both require patience and skill to master.
